Orange Glazed Cranberry Bread With A Streusel Topping

I normally don’t give recipes a 10 out of 10, but this one blew my last buds away..the combination of the orange, cranberry and walnuts basically had me eating over half of the loaf. Incredibly good and the flavors just burst out of the bread.

 

Ingredients

Scale

Streusel

1/4 cup all-purpose flour (spooned & leveled)

2 Tablespoons  granulated sugar

1/2 teaspoon ground cinnamon

3 Tablespoons unsalted butter, cold and cubed

Bread

2 cups all-purpose flour (spooned & leveled)

1 teaspoon baking soda

1/2 teaspoon salt

1 large egg, at room temperature

1/2 cup packed light or dark brown sugar

1/2 cup  granulated sugar

1 cup  buttermilk, at room temperature*

1/3 cup vegetable oil (or melted coconut oil)

1 teaspoon pure vanilla extract

2 teaspoons orange zest

1 cup cranberries, fresh or frozen (do not thaw)*

optional: 1/2 cup chopped pecans or chopped walnuts

Glaze

1 cup (120g) confectioners’ sugar

12 Tablespoons orange juice- squeeze from the orange you zested.

Instructions

Combine Streusel ingredients and set aside.

Mix bread ingredients together and then sprinkle with streusel topping.

Bake 350 degrees for 45-55 minutes.

Combine topping and glaze over the top when cool.
