One of my favorite no bake recipes is finally being shared! My kids are home from college and I am stocking up the cookie jar and these are one of my favorites! They are easy no bake and they come together in less than 8 minutes. 4 Simple Ingredients and they taste amazing!

No Bake Butterscotch Corn Flake Cookies

One of my favorite no bake recipes is finally being shared! My kids are home from college and I am stocking up the cookie jar and these are one of my favorites! They are easy no bake and they come together in less than 8 minutes. 4 Simple Ingredients and they taste amazing!

 

Ingredients

Scale

1 11 oz. bag butterscotch chips 1 cup creamy peanut butter 6 cups corn flakes cereal 3/4 cup mini chocolate chips divided

Instructions

Step 1: Melt peanut butter and butterscotch chips in a microwave-safe bowl for 1 minute. Stir. Heat for an additional 15 seconds. Some of the butterscotch chips might not be completely melted and that’s totally fine. Stir until everything is melted and smooth. It’s always better to under-melt vs. overheat.

Step 2: Add the cornflakes and stir with a rubber spatula. Make sure the cereal is completely coated with the peanut butter and butterscotch mixture.

Step 3: Stir in 1/2 cup of the mini chocolate chips.

Step 4: Scoop cookies using a medium cookie scoop (2 Tbsp) onto a parchment paper-lined baking sheet (or wax paper).

Step 5: Sprinkle cookies with more mini chocolate chips, if desired.
