Hot Chocolate Cookies
If you love hot chocolate with marshmallows, you will love this hot cocoa cookie recipe. Ingredients
Recipe (Watch for assembly instructions)
Cookie Base:
1/2 cup of butter
12 oz semi sweet chocolate chips
1 1/2 cup flour
1/2 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 cups brown sugar
3 eggs
2 tsp chocolate extract or vanilla
mini marshmallows – 3 for each cookie
Icing:
4 Tbsp melted butter
1/4 cup cocoa powder
1/4 cup of hot water
1 tsp chocolate or vanilla extract
2 cups of powdered sugar
Instructions
In small sauce pan melt butter, then whisk in chocolate chips. Whisk until butter and chips are melted into a smooth chocolate sauce. Set aside to cool.
In a large bowl on stand, combine sugar, eggs, vanilla. Mix well. Add chocolate sauce and slowly add flour until combined. Cover with plastic and refrigerate for one hour.
Preheat oven to 325 degrees. Grease cookie sheet and add parchment. Spoon cookie dough onto sheet. Press down a little bit.
Bake 10-2 minutes, Remove from oven. Top each cookie with 3 mini marshmallows. Place back in oven for 2-3 minutes.
Let cookies cool, then in a small sauce pan, melt butter, cocoa powder, water and extract. Add powdered sugar. Allow to cool for just a few minutes and pour over the top of the cookies.
