Pecan Sandies

This is a small batch recipe for the BEST light and fluffy butter pecan cookies you will ever eat. They are perfect size for a coffee break or a midnight snack! They come together in less than 10 minutes! This recipe makes about 16 3 inch cookies.

Recipe:

1/2 cup ( 1 stick ) of butter, room temperature

1/3 cup sugar

1 tsp vanilla extract

1 cup of flour

1/8 tsp of kosher salt

3/4 cup of chopped pecans

Instructions

Preheat the oven to 350 degrees. Mix the cookie dough about 2 minutes, fold in pecans. Roll into balls, place on a cookie sheet. Gently flatten with a glass. Bake for 15 minutes, rotating sheets halfway through for even cooking. Remove and cool cookies on a wire rack.
