Healthier Strawberry Cupcakes- A Great Small Batch Recipe
This recipe is a healthier version of strawberry cupcakes. I use a smaller 6 jumbo muffin size pan to make these, but you can use a regular cupcake pan also. You will LOVE these muffins, perfect for the spring and summer!
Ingredients
Recipe: Makes 6 Jumbo or 12 regular size cupcakes
½ cup melted coconut oil
⅕ cup plain greek yogurt or sour cream
1large eggs
⅓ cup honey or granulated sugar
½ cup high-quality strawberry jam
1 teaspoons vanilla extract
1 ⅕ cups all purpose flour
⅔ teaspoons baking powder
⅕ teaspoon baking soda
⅕ cup milk
Frosting
2 ⅔ ounces cream cheese, at room temperature
1 sticks salted butter, at room temperature
1 ¼ cups powdered sugar
½ teaspoon vanilla extract
⅕ cup warm milk
Instructions
Bake 350 for 25 minutes, then make frosting and frost.
