I have been baking a lot this Christmas season. I have gravitated towards the round cookies because they are easy, low fuss and fun to eat over the complicated dessert recipes. I whipped these up in about 10 minutes (after they froze for a hour) and my coworkers are loving these today!

If you do not like white chocolate, you can sub milk chocolate or even butterscotch. Sprinkles are optional and can be customized to the color theme you  need, Valentines, Easter etc.

Ingredients

1 cup chunky peanut butter

1 cup powdered sugar

2 Tbsp. butter softened

1 1/2 cup rice crispies cereal

10 oz. white melting chocolate

sprinkles

Instructions

Combine peanut butter, butter, and sugar in a mixing bowl. Add cereal. Mix well.

Roll into 1″ balls and place on parchment lined baking sheet. Freeze 1 hour.

Melt your chocolate in the microwave or double boiler then dunk each ball in the chocolate.

Place back onto baking sheet and add sprinkles. Only do two or three truffles at a time before adding the sprinkles since the white chocolate hardens quickly.
