Easy Pecan Butter Balls (Russian Tea Cakes)

This is a Classic Christmas Cookie that is a family tradition for over 75 years! The title on the recipe card is Butter Balls, which is very similar to Russian Tea Cakes and the current name of Snowballs. This recipe uses ground pecans instead of walnuts and a little less powdered sugar in the mixture than the current recipe for snowballs!
These are buttery, soft and rolled in powdered sugar to please just about anyone. Make sure you get your face, chin and lips full of the powdery goodness.

Ingredients

Scale

1 cup unsalted butter, softened

1 teaspoon vanilla extract

2 cups all-purpose flour

6 tablespoons powdered sugar

1 cup finely ground pecans(you can use walnuts too)

⅓ cup powdered sugar, or more as needed for rolling them when done.

Instructions

Preheat the oven to 350 degrees F (175 degrees C).

Grind pecans in a small food grinder.  If you can purchase them ground, even better.

Combine all ingredients and roll into 1 inch bite size balls.

Place on a cookie tray and bake for 12 minutes.

 

Let cool for 5 minutes, roll twice in powdered sugar.
