I filmed this live, so you its a little longer than normal because I can’t cut out the downtime:) These lovely cinnamon swirl cookies are light, chewy and have frozen chunks of cinnamon batter mixed in, very unique and tasty. I frosted them with a simple powdered sugar and milk glaze. These freeze well and are perfect with a cup of coffee or a glass of milk.

Ingredients

Scale

Cinnamon Swirl

1/2 cup dark brown sugar

4 tablespoons salted butter, at room temperature

2 teaspoons cinnamon

Cookies

2 sticks (1 cup) salted butter, at room temperature

3/4 cup dark brown sugar

2 large eggs

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

Mixture to roll the cookies in:

1/3 cup granulated sugar

2 teaspoons cinnamon

Icing

2 cups of powdered sugar

2 tsp of milk

Instructions

Mix cinnamon swirl together, on a cookie sheet, drop clumps and freeze for 10-15 minutes

Mix cookie ingredients together, then add the frozen cinnamon clumps. Using a cookie scoop, scoop the cookies and roll in the cinnamon sugar mixture.

Bake for 9-10 minutes at 350 degrees.

Cool and frost.
