I own a little company that caters to vacationers in our area. I bake for them and drop off packages for AIRBNB and VBRO Rental guests..I also fill refrigerators and do small catering packages to those that really don’t like to spend their precious time in the kitchen. It is a side gig for me that I enjoy now that my kids are in college and I have plenty of time to help others. I am going to start sharing some of the recipes I use..and this is one of them! This Banana cake normally makes a rotation in my weekly drop offs, today I added chocolate chips to add some sweetness.
Recipe:
1/2 cup of white sugar
1/4 cup of brown sugar
1/4 cup of oil
1 tsp soda
1 tsp vanilla
1 egg
1/4 cup of milk
1/2 tsp baking powder
1 cup of flour
2 bananas mashed
Frosting:
1/2 cup of powdered sugar
4 oz cream cheese
1/4 cup butter
1/2 tsp vanilla
Mix ingredients for the cake well. Add to a 8×8 greased pan. Bake at 350 for 25-30 minutes. Cool
Beat frosting ingredients together, spread on cooled cake.
