Strawberry Rhubarb Crisp
This Strawberry Rhubarb Crisp is a perfect summer dessert! Loaded with fresh strawberries and fresh rhubarb (you can use frozen) or if you do not like rhubarb or don’t know what it is you can use any type of other berry in this crisp.
Ingredients
Bottom Fruit Mixture:
4 cups diced rhubarb
2 cups diced strawberries
1/2 cup of sugar
1 1/2 tsp cornstarch
1 tsp vanilla
Topping:
3/4 cups of flour
1/2 cup of brown sugar
6 TBSP butter
3/4 cup of oats
Instructions
Slice and dice rhubarb and strawberries. Add to a bowl. Combine sugar, cornstarch and vanilla and pour over berries. Mix well, you do not want the sugar white.
Place fruit in the bottom of a high sided 8×8 pan.
In another bowl, combine flour, brown sugar, sugar and oats. Add diced half cold butter and mix until crumbly. Crumble over the fruit mixture.
Bake at 350 degrees for 40-45 minutes.
